Prunaio
"Prunaio" is made using a number of clones of Sangiovese Grosso which have been tested over a long period of time on the estate. Steps are taken in the vinevard to reduce production per hectare and ensure that the grapes are in perfect condition at harvesting. Selected yeasts are used for the temperature-controlled fermentation process; the long maceration phase and the timely warming of the cellar facilitates malolactic fermentation. The following spring, the young wine is transferred into small oak barriques where it ages for a further 12 months at a constat ambient temperature. Bottle ageing in horizontally stored bottles takes place in temperature-controlled conditions for a further 12 months. This wine is only produced when there is a particularly fine vintage and in quantities that rarely exceed 35.000 numbered bottles.
