Monile
"Monile" is a red wine made from classic grape varieties, with
a predominance of Cabernet Sauvignon clone selected on the estate. The
very low production per hectare produces a full-bodied wine suitable
for prolonged ageing, during which any youthful roughness can be smoothed
out. Vinification takes place using selected yeast inoculum in temperature-controlled
conditions with lengthy maceration in small stainless steel vats. The
following spring, when the malolatic fermentation is complete, the wine
is transferred into small, fine oak barriques, where it matures for about
18 months in temperature- controlled conditions. Bottles ageing, again
at a constant temperature, lasts for a minimum of 12 months before the
wine is released onto the market. "Monile" is only produced
when there is a particularly fine vintage , and total production is about
15.000 numbered bottles.
